It will probably be best for you to organize your essay according to the following phases:

You will need a minimum of five quotes. Try to quote the interview if possible.
Phase 1: Introduce your profile subject; tell us who he or she is and how/why they are significant in their field. You might tell us a little about where they are from, where they were educated, and so on. Thesis statement at the end.
Phase 2: In this phase, give some background and context by describing your subject’s field of study. If your subject is an electrical engineer, for example, define what an electrical engineer does.
Phase 3: After you have defined their field, you will then explain the contributions your subject has made to this field. To do this you will need to find some of the subject’s published works and summarize (using quotes, etc) these works for your audience.
Phase 4: The interview. Describe your interview, paraphrasing and using quotes to emphasize revealing elements of your subject. In this phase you can use the interview to highlight your subject’s perspectives on their career, their background, the importance of their work, etc.
Phase 5: Awards, recognition, family, etc. This is where you can detail the milestones in your subjects career and their life in general.
Phase 6: Conclusion. Here you can describe the ultimate significance of your subject and their contributions to their field and to UTSA.
